How to Make the Thai Peanut Chicken Bowl
Step 1: Cook the Chicken
Start by preparing the chicken. Season both sides with salt, pepper, garlic powder, and ground ginger. Heat olive oil in a skillet over medium heat. Once the pan is hot, add the chicken breasts and cook for about 6-7 minutes per side, or until the chicken is golden brown and fully cooked through (internal temperature of 165°F). Remove from the heat, let it rest for a few minutes, then slice the chicken into strips.
Step 2: Make the Peanut Sauce
While the chicken is cooking, you can prepare the peanut sauce. In a bowl, combine the peanut butter, soy sauce, honey, rice vinegar, lime juice, garlic, and grated ginger. Stir until the mixture is smooth. If the sauce is too thick, add water a tablespoon at a time until you reach your desired consistency. For some extra spice, stir in a pinch of chili flakes or a dash of sriracha sauce. Taste and adjust the sweetness or saltiness based on your preference.
Step 3: Assemble the Bowl
Once the chicken and sauce are ready, it’s time to assemble your bowl. Start with a base of jasmine rice (or cauliflower rice if you prefer low-carb). Add the sliced chicken on top of the rice. Then, layer in your fresh veggies—cucumber, carrot, and bell pepper. Drizzle the homemade peanut sauce generously over the chicken and veggies. Garnish with fresh cilantro leaves, crushed peanuts, and a squeeze of lime juice. If you like it spicier, add extra chili flakes or a dollop of sriracha on top.
